Blackstone Birria tacos with a delicious twist

Blackstone Chicken Birria Tacos is made from slow cooked birria to make the best birria tacos on the Blackstone griddle flat top grill!

Ingredients

  • 2 cups leftover beef birria (steps to make birria is in the post above)
  • 6 corn (or flour) tortillas
  • 2 cups shredded cheese of choice (Mexican blend is preferred)
  • 1 cup chopped fresh cilantro
  • 1 cup diced onion
  • Toppings: pickled red onions, lime wedges, salsa, or guacamole and hot sauce

Instructions

  • Prepare Ingredients:
    Gather your leftover birria, tortillas (corn or flour), diced onions, chopped cilantro, lime wedges, cheese, cooking oil, and any desired toppings such as salsa, hot sauce or sweet pickled red onions.
  • Heat the Blackstone Griddle:
    Preheat your Blackstone griddle over medium-high heat. Add a drizzle of cooking oil and spread it evenly across the surface.
  • Warm Tortillas and Dip in Birria Broth:
    Dip each tortilla in the birria broth for a few seconds to soak up the flavor. Then, lay them flat on the oiled griddle.
  • Flip Tortillas and Add Fillings:
    After about 30 seconds, flip the tortillas over. On one side of each tortilla, add a layer of cheese, followed by some of the birria meat and chopped cilantro and diced onion. Sprinkle additional cheese on top.
  • Fold and Press Tacos:
    Use a hibachi spatula to fold the empty sides of each tortilla over the filled side. Press down slightly to seal the tacos closed.
  • Cook Tacos:
    Cook the folded tacos for about a minute or two per side, depending on how crispy you want them.
  • Serve with Birria Broth and Toppings:
    Serve the tacos with the remaining birria broth for dipping. Garnish with lime wedges, salsa and sauce of your choice.

Notes

  • Get creative with your toppings. Alongside the traditional cilantro, onions, and lime, consider adding homemade pickled vegetables like jalapeños or carrots for an extra tang. You can also add carrots and jalapeno 
  • Before slow cooking, sear the meat on high heat until it develops a dark, caramelized crust. This step adds a rich umami flavor to the birria that's irreplaceable.
  • To make tacos in the oven simply preheat your oven to a low temperature, typically around 200°F (93°C). Place your plates or taco holders in the oven for a few minutes, allowing them to warm up. When it's time to assemble and serve your Blackstone birria tacos, transfer them onto the warm plates or taco holders. The warmth will help preserve the heat of the tacos and prevent them from cooling too quickly.
