I build every cup with 3 jobs in mind: creamy, crunchy, and bright.


Creamy is your mousse, pudding, cheesecake layer, yogurt whip, whatever. Crunchy is your cookie crumbs, granola, toasted nuts, cereal, crushed pretzels.

Bright is fruit, citrus zest, jam swirl, or even a little tangy layer that keeps the whole thing from tasting flat and sweet.

The layering, chilling, and make-ahead tips I use so every cup sets right and tastes balanced.

The biggest mistake I made early on was killing the texture by assembling everything too soon. Cookie crumbs soak up moisture fast, fruit releases juice, and suddenly your cute layers turn into one soft blob. Now I do this instead:

  • Make the crunchy layer “protected.” Either mix crumbs with a little melted butter so it holds up, or put crunch in the middle and finish with a thicker cream layer on top to seal it.
  • Drain your fruit. If you’re using berries, peaches, pineapple, anything juicy, I chop it, let it sit, then drain the extra liquid so it doesn’t flood the cup.
  • Use a thick filling. If your cream layer is loose, it slides and smears. I like fillings that can hold a spoon mark. Even chilling the bowl for 20 minutes before piping makes a huge difference.

Also, presentation is way easier than people think. I almost always pipe the creamy layers using a zip bag with the corner snipped. Your layers look clean, you waste less, and you don’t get that messy streaky cup wall.

Last thing: toppings are the finish line. If it’s crispy, add it right before serving. If it’s soft (like chocolate shavings), you can add it early.
