When dinner needs to happen fast, shredded chicken meals make weeknights a lot easier. Cooked chicken can quickly turn into tacos, sandwiches, casseroles, pasta, rice bowls, soups, and other simple dinners without starting from scratch.

These easy shredded chicken recipes are especially useful for busy families, meal prep, and nights when you already have leftover chicken or rotisserie chicken in the fridge.

Many of them can be made ahead, packed for lunch, or reheated for another meal later in the week.

Cook a big batch once (or grab a rotisserie chicken) and you’ve got the start of tacos, soups, casseroles, sandwiches and pasta for the whole week.

Every recipe lists approximate protein per serving, so it’s easy to pick a high-protein dinner.

HOW TO MAKE SHREDDED CHICKEN

Boneless chicken breasts are leaner, and thighs stay juicier and are harder to overcook. Either one works for every recipe below. Whichever method you use, the chicken is done at 165°F in the thickest part.

Slow Cooker

Place 2 to 3 pounds of boneless chicken in the slow cooker with 1 cup of chicken broth, 1 teaspoon each of salt and garlic powder and 1/2 teaspoon of pepper. Cook on low for 4 to 6 hours or high for 2 1/2 to 3 hours, then shred right in the juices.

Instant Pot

Add 1 cup of broth and the seasoned chicken, then cook on high pressure for 10 to 12 minutes for fresh breasts (15 to 18 minutes from frozen). Let the pressure release naturally for 10 minutes before opening, which keeps the chicken from drying out.

Stovetop

Cover the chicken with broth or salted water by an inch, bring it to a gentle simmer, then cover and cook 12 to 15 minutes. Let it rest 5 minutes before shredding.

Rotisserie Chicken

The fastest route of all. Pull the meat off while it’s still warm (it comes away from the bone much easier), and save the carcass for broth.

How to Shred It

Use two forks to pull the meat apart, or put warm chicken in a bowl and run a hand mixer on low for 20 to 30 seconds. The mixer method is a huge time saver for a big batch.

How Much Shredded Chicken Will You Get?

  • 1 pound of raw boneless chicken = about 2 1/2 to 3 cups shredded
  • 1 average rotisserie chicken = about 3 to 4 cups shredded
  • 1 large chicken breast = about 1 1/2 cups shredded
  • Fridge: 3 to 4 days in an airtight container
  • Freezer: up to 3 months for the best flavor. Freeze in 2-cup bags with a splash of broth so it stays moist.
