Burger Station Quick Guide
The key numbers and tips to plan your station at a glance.
How Much Beef 1/2 lb per adult
Plan 1 1/2 burgers per adult and 1 per child. Use 1/3 lb patties for full burgers and 2 oz patties for sliders.
Best Beef 80/20
Choose 80/20 ground beef. Leaner beef dries out on the grill.
Safe Temperature 160°F
Cook beef to 160°F inside and turkey or chicken to 165°F. Hold cooked patties at 140°F or above.
Cook In Waves every 15 min
Start a new batch every 10 to 15 minutes so there’s always a fresh tray instead of one pile going cold.
Make Ahead 1 day before
Shape patties, slice onions and tomatoes, wash lettuce and make sauces the day before.
Line Order 6 zones
Plates, buns, hot patties, cooked toppings, fresh toppings on ice, then sauces.
Food Safety 2-hour rule
Keep cold toppings at 40°F or below and toss anything left out more than 2 hours (1 hour above 90°F).

HOW TO SET UP A BURGER STATION: 25 TIPS
1. Plan 1 1/2 Burgers Per Adult
Most people eat one full burger, and about half come back for a second or grab a slider. Plan 1 per child.
That works out to about 1/2 pound of raw ground beef per adult.
2. Use 80/20 Ground Beef
The fat keeps burgers juicy on the grill. Leaner beef like 90/10 dries out fast, especially if patties sit in a warming pan.
Buy a big family pack and shape your own patties. It’s cheaper than pre-formed patties.
3. Shape Patties The Day Before
Shape 1/3 pound patties a little wider than the buns, press a dimple in the center so they stay flat, and stack them between parchment in the fridge.
A burger press makes every patty the same size, so they all cook at the same rate.
4. Season Right Before Cooking
Salt pulls moisture out of raw beef, so season patties just before they hit the grill.
Salt, pepper and a little garlic powder is all a good burger needs.
5. Offer One Or Two Signature Burgers
Pick one or two signature builds, like a smash burger or a mushroom Swiss, and let guests customize the rest.
You’ll find 15 burger recipes at the end of this post to choose from.
6. Add A Turkey Or Veggie Option
Plan a turkey, chicken or veggie patty for about 1 in 10 guests.
Cook them on a separate part of the grill or in a skillet and keep them on their own labeled platter.
7. Grill Over Medium-High Heat
Cook 4 to 5 minutes per side, flipping once, until the center reads 160°F for beef and 165°F for turkey or chicken.
An instant-read thermometer is the only reliable way to know.
8. Use A Griddle For A Big Crowd
A flat top griddle cooks 20 or more patties at once and is perfect for smash burgers.
Smash burgers cook in about 4 minutes, which keeps a long line moving.
9. Melt The Cheese On The Grill
Add cheese in the last minute of cooking and close the lid. Guests can still swap it at the station.
Pre-melted cheese saves a lot of time in the line.
10. Cook In Waves
Start a fresh batch every 10 to 15 minutes instead of grilling everything at once.
There’s always a hot tray coming off the grill and nothing sits long enough to dry out.
11. Keep Patties Juicy While They Hold
Move cooked patties into a chafing dish or foil pan with a splash of beef broth and cover loosely.
The broth keeps them moist. Hold them at 140°F or above.
12. Toast The Buns
Toast buns cut side down on the grill for 30 seconds right before serving, or keep them in a covered basket so they don’t go stale.
Offer brioche, potato and sesame buns, plus lettuce wraps and gluten-free buns.
13. Set Out A Cheese Board
American, cheddar, pepper jack and Swiss cover most people. Add blue cheese crumbles for the adventurous.
Plan about 1 1/2 slices per person.
14. Keep Fresh Toppings On Ice
Lettuce, tomato, red onion, pickles and avocado stay crisp in an ice chilled condiment server.
Slice tomatoes and onions the day before and store them separately.
15. Add A Few Cooked Toppings
Caramelized onions, sauteed mushrooms, crispy turkey bacon and fried eggs make the station feel special.
Keep them warm in small slow cookers or covered pans.
16. Put Sauces In Squeeze Bottles
Squeeze bottles move the line along much faster than jars and big bottles.
Offer ketchup, mustard, mayo, burger sauce, BBQ sauce and one spicy option.
17. Make A Homemade Burger Sauce
Mix mayo, ketchup, relish, mustard and a splash of vinegar. It takes 5 minutes and tastes better than anything bottled.
Make it 2 days ahead so the flavors come together.
18. Use Burger Baskets
Burger basket liners and baskets make the station look like a real burger joint and hold fries on the side.
Sturdy plates work too. Thin paper plates fold under a loaded burger.
19. Keep Raw And Cooked Meat Separate
Use separate trays, tongs and spatulas for raw and cooked patties.
Put the raw tray away as soon as the last batch goes on the grill.
20. Set The Line In The Right Order
Go in this order: plates and baskets, buns, hot patties, cooked toppings, fresh toppings on ice, sauces, then sides at the end or on a separate table.
If you have room, set the station up so people can serve from both sides.
21. Plan Easy Sides
Fries, chips, coleslaw, pasta salad and grilled corn all go well and most can be made ahead.
Put sides on their own table so the burger line doesn’t stall.
22. Make Sliders For Kids
Slider-size patties with American cheese on small buns are easier for kids to eat.
They also stretch the beef further for big crowds.
23. Prep Ahead So Party Day Is Easy
Two days before, shop and make sauces. The day before, shape patties, slice toppings, wash lettuce and caramelize onions.
On party day, heat the grill an hour before, set out toppings on ice and start the first batch 15 minutes before guests arrive.
24. Check Temperatures Through The Party
Check holding pans every 30 minutes to make sure patties stay above 140°F.
Swap cold toppings for fresh bowls from the fridge every hour.
25. Keep Food Safety Simple
Cold toppings should stay at 40°F or below. Throw out anything that sat out more than 2 hours (1 hour if it’s over 90°F outside).
Refrigerate leftover patties within 2 hours. They keep 3 to 4 days.
HOW MUCH TO BUY FOR A BURGER STATION
These numbers assume adults eating 1 1/2 burgers each. Add a veggie or chicken option for about 1 in 10 guests.
| Item | Per Person | 10 Guests | 25 Guests | 50 Guests |
|---|---|---|---|---|
| Ground beef (80/20) | 1/2 lb | 5 lbs | 12 1/2 lbs | 25 lbs |

WHAT A BURGER STATION COSTS

WHAT TO DO WITH LEFTOVERS
Refrigerate cooked patties within 2 hours. They keep 3 to 4 days. Chop them up for burger bowls, cheeseburger pasta or quesadillas.
