Apple Pie Filling
1cupunsalted melted butter
1cupbrown sugar
1cupwhite sugar
1tspcinnamon
2eggs
2tspvanilla extract
3cupsall purpose flour (plus more for rolling)
1tspbaking soda
1/4cupunsalted butter
3/4tspsalt
12ozchocolate chips
1 1/2 cupdark chocolate chips
1 1/2cupsSmoked walnuts
1/2cupsRolled Oats
1 1/4 tspVanilla Extract
Instructions
Preheat your pellet smoker at 350℉. Preheat the pellet grill for 15 minutes with the lid closed.
Beat together wet ingredients like butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla extract, beat with an electric mixer until well mixed.
Gradually add dry ingredients flour, oats, baking soda, and baking powder to the wet mixture, mixing until well combined.
Stir in the chocolate chips, dark chocolate and smoked walnuts to the mixture.
Drop by dough using rounded tablespoons or ice cream scoop onto prepared cookie sheets lined with parchment paper or Silpat mats.
Now smoke the cookies for 13-15 minutes or until the edges are golden brown but the center is still soft when pressed with your finger.
Let cool on a baking sheet for 5 minutes before transferring to a wire rack. It will let the heat distribute evenly throughout the smoker cookie and prevents the center from over-baking or becoming too soft.
