Ingredients

Apple Pie Filling

  • 1 cup unsalted melted butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tsp cinnamon
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups all purpose flour (plus more for rolling)
  • 1 tsp baking soda
  • 1/4 cup unsalted butter
  • 3/4 tsp salt
  • 12 oz chocolate chips
  • 1 1/2 cup dark chocolate chips
  • 1 1/2 cups Smoked walnuts
  • 1/2 cups Rolled Oats
  • 1 1/4 tsp Vanilla Extract

Instructions

  • Preheat your pellet smoker at 350℉. Preheat the pellet grill for 15 minutes with the lid closed.
  • Beat together wet ingredients like butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla extract, beat with an electric mixer until well mixed.
  • Gradually add dry ingredients flour, oats, baking soda, and baking powder to the wet mixture, mixing until well combined.
  • Stir in the chocolate chips, dark chocolate and smoked walnuts to the mixture.
  • Drop by dough using rounded tablespoons or ice cream scoop onto prepared cookie sheets lined with parchment paper or Silpat mats.
  • Now smoke the cookies for 13-15 minutes or until the edges are golden brown but the center is still soft when pressed with your finger.
  • Let cool on a baking sheet for 5 minutes before transferring to a wire rack. It will let the heat distribute evenly throughout the smoker cookie and prevents the center from over-baking or becoming too soft.
