Preheat your Blackstone griddle to medium-high heat. Once hot, place the chopped bacon directly on the griddle and cook for 5–7 minutes, stirring occasionally, until crispy. Move the bacon to the side.
Drizzle the olive oil onto the empty side of the griddle and spread it out using your spatula. Add the chicken pieces in a single layer, then season with salt and pepper. Let the chicken cook for 6–8 minutes, stirring occasionally, until golden brown and fully cooked through.
Add the minced garlic directly to the chicken and stir it in. Cook for about 1 minute.
Push the chicken together with the cooked bacon and mix everything well so the flavors combine evenly.
In a small bowl, stir together the ranch dressing and ranch seasoning. Pour this mixture over the chicken and bacon on the griddle, then use your spatulas to toss everything together until fully coated.
Spread the mixture out slightly, then sprinkle the shredded cheddar cheese evenly over the top. Cover with a lid or metal bowl and let it sit for 1–2 minutes until the cheese melts.
Once the cheese is melted, remove from heat and garnish with chopped fresh parsley. Serve hot.
