Ingredients Needed

Chuck Roast/Beef Short Ribs:

  • These cuts are ideal for Blackstone Birria tacos because of their marbling, which melts during slow cooking, ensuring the meat is flavorful and tender.
  • Chuck roast is especially great for a budget-friendly option. It’s easy to shred after cooking, absorbing all the rich flavors of the birria broth.

Tortillas:

  • Corn vs. Flour Tortillas: Corn tortillas are traditional and offer a distinct flavor and texture, essential for an authentic Mexican experience. Flour tortillas are softer and can be a good alternative if you prefer a milder taste.
  • Lightly frying the tortillas in a bit of oil can add a delightful crispiness to your tacos. Make sure they’re still flexible enough to fold without breaking.

Cheese:

Oaxaca, Queso Fresco and  Monterey Jack: A combination of these cheeses adds a creamy, tangy, and slightly salty flavor that complements the spicy Blackstone Birria tacos. Oaxaca cheese melts beautifully like mozzarella, while queso fresco offers a crumbly texture, and Monterey Jack brings a mild and smooth taste.

Cilantro and other herbs:

Traditional beef Blackstone Birria tacos recipe calls for fresh cilantro. It adds a burst  of freshness and enhances flavor of beef birria tacos.

Lime wedges: .

Lime wedges bring a zesty twist, cutting through the heaviness of the dish.

Cooking Oil:

High smoke point oil: Choose oils like vegetable, canola, or avocado oil for their high smoke points and neutral flavors, ensuring that they don’t overpower the dish’s authentic tastes.

Salt and Pepper:

Use roasted fresh black pepper because It enhances the natural flavors of the meat and helps to balance the spices in the birria broth.

Confidence Tip

Heat your plates or taco holders in the oven before serving. Warm plates help to keep the tacos at an optimal temperature and prevent them from cooling too quickly.

Simply preheat your oven to a low temperature, typically around 200°F (93°C). Place your plates or taco holders in the oven for a few minutes, allowing them to warm up. When it’s time to assemble and serve your Blackstone Birria tacos, transfer them onto the warm plates or taco holders. The warmth will help preserve the heat of the tacos and prevent them from cooling too quickly.

Step-by-Step Instructions

Now let’s dive into the step-by-step instructions for creating the perfect Blackstone Birria Tacos:

Step 1: Boil the Dried Chilies

Boil water in a big sized pot. Add the dried chilies and simmer for 10 minutes until softened. Remove from heat and let cool.

Step 2: Blend the chili and spice mixture

  • In a blender, combine the softened chilies, garlic, onion, cumin, oregano
  • Blend the mixture until smooth, adding water as needed to achieve a thick, pourable consistency. Set aside.

Step 3: season and search the beef

  • Season the beef chuck roast with salt and black pepper on all sides.
  • Heat a tablespoon of oil on the Blackstone griddle over medium-high heat.
  • Sear the beef chuck roast on all sides until browned and caramelized, about 3-4 minutes per side.

Step 4: cooking in the instant pot

  • Once seared, transfer the beef chuck roast to a slow cooker or a large pot.
  • Add 2 cups of water. It will provide enough moisture to absorb the spice’s flavor and come out tender and juicy.
  • Pour the blended chili mixture over the beef chuck roast, making sure it is fully submerged. .
  • Please make sure the lid of the Instant Pot is tightly closed, and then turn the valve to the “sealing” position.
  • Select the “Manual” or “Pressure Cook” setting and adjust the time to 45 minutes for beef chuck roast and short ribs. This time frame should be sufficient to make the meat tender and flavorful.
  • When the cooking time is finished, allow the Instant Pot to naturally release its pressure. This might take about 20 minutes. It’s important to let the pressure release naturally, as it continues to cook the meat, ensuring it becomes tender.

Step 5: Shred the Cooked Beef

  • Once the beef is cooked, remove it from the slow cooker or pot and shred it using two forks. Strain the broth in another pot. Separate the grease  ( upper surface fat, consume) in a separate bowl.
  • Preheat griddle
  • Heat a clean Blackstone griddle over medium heat and lightly oil the surface.

Step 6: Cooking Tortilla in Consume.

Dip a corn tortilla into the birria broth( consume), making sure to coat both sides.
