- 4 slices thick-cut turkey bacon
- 12 oz ground turkey breakfast sausage
- 4 eggs
- 1/2 cup heavy whipping cream
- Blackstone SPG seasoning
- 4 slices croissant bread
- 2 slices cheddar
- Raspberry jelly
- Powdered sugar (optional)
- Cooking oil
Instructions:
- Set the griddle to low and spread a little oil.
- Cook the turkey bacon, pressing and turning often, then cut each slice in half.
- Shape the sausage into two 6 oz patties and cook, flipping once seared.
- Whisk the eggs, cream and SPG, pour into a large silicone omelet ring and cook until nearly set.
- Fold the omelet into thirds and cut into two pieces.
- Toast the croissant bread on both sides.
- Top the nearly done patties with cheddar to melt.
- Stack bread, cheesy patty, omelet, bacon, a spoon of raspberry jelly and the second slice.
- Dust with powdered sugar and serve warm.
25. Fully Loaded Breakfast Croissant

Ingredients:
- 2 all-butter croissants, split
- 3 1/2 tbsp (50 g) butter
- 2 to 3 turkey or beef sausage patties
- 2 eggs
- 4 slices smoked turkey
- Applewood smoked cheddar slices
- Gouda slices (optional)
- Hot sauce or brown sauce
Instructions:
- Heat the griddle to medium-high and melt the butter.
- Toast the croissants cut-side down in the butter until golden, then set aside.
- Cook the sausage patties, turning, until nearly done.
- After the last flip, top them with cheese and dome to melt.
- Warm the smoked turkey slices on the griddle.
- Cook the eggs to your liking.
- Fill the croissants with sausage, egg, turkey and extra cheese.
- Add hot sauce or brown sauce, close and serve right away.
26. Steak Ranchero Omelette

Ingredients:
- About 2 lbs steak (sirloin, ribeye or asada)
- 1 green and 1 red bell pepper, chopped
- 1/2 onion, chopped
- 2 tomatoes, chopped
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 2 tsp black pepper
- Crushed red pepper and salt, to taste
- 8 to 10 eggs
- Shredded cheese, sour cream, queso fresco and salsa
- Oil or butter
Instructions:
- Season the steak with the onion powder, garlic powder, black pepper, red pepper and salt.
- Heat the griddle to medium-high and cook the peppers in a little oil until they soften.
- Add the onion and tomato, season the same way and cook until lightly charred.
- Cook the steak to your liking, chop it right on the griddle and set aside.
- Beat about 2 eggs per omelette with salt and pepper.
- Pour the eggs onto an oiled spot, let them set and flip once firm.
- Add steak, veggies and cheese to one half and fold over.
- For a crispy crust, melt a little cheese on the griddle and set the omelette on top until it sticks.
- Top with sour cream, queso fresco and salsa.
27. Breakfast Chilaquiles
Fresh-fried tortilla chips get tossed in a charred tomatillo salsa and topped with beef chorizo, eggs and lime crema.
It’s the most work on this list, but you can make the salsa and chips the day before.
Ingredients:
- 4 to 6 large eggs
- 12 corn tortillas, cut into triangles
- 2 to 3 cups vegetable oil
- 1/2 lb ground turkey sausage
- 1/2 lb beef chorizo
- Salsa: 6 tomatillos, 1 to 2 jalapeños, 1/2 white onion, 3 garlic cloves, 1/2 cup cilantro, 1 tsp salt, 1/2 tsp pepper, 1 to 2 tsp chicken bouillon
- Crema: 1/2 cup crema, juice of 1 lime, 1 to 2 tsp Blackstone Tequila Lime seasoning
- Cotija, cilantro and lime wedges
Instructions:
- Preheat the griddle to medium-high (about 400°F) with high, medium and low zones.
- Heat oil in an aluminum pan on the griddle to 350°F and fry the tortilla triangles in batches 2 to 3 minutes until crisp, then salt.
- Char the tomatillos, jalapeños and onion on the griddle, then blend with the garlic, cilantro and seasonings.
- Brown the sausage and chorizo, breaking them up, and move to a warm spot.
- Add the chips to the griddle, pour the salsa over and toss quickly.
- Drop the heat to about 300°F and cook the eggs.
- Whisk the crema, lime and seasoning.
- Plate the chips, add the meat and eggs, then finish with crema, cotija, cilantro and lime.
28. Corned Beef Hash Skillet
Crispy diced potatoes, peppers and seared corned beef get piled into a hot skillet and topped with runny eggs.
It’s a great way to use up any leftover corned beef from the holidays.
Ingredients:
- 1/2 bag frozen diced potatoes
- 1/2 cup diced sweet onion
- 1/4 cup diced green and red bell pepper
- 1 to 2 cups corned beef, cut into thick bites
- 3 to 4 eggs
- Salt, pepper and garlic powder
- Avocado oil
- Green onions and sriracha
Instructions:
- Set the griddle to high and preheat a cast iron skillet on it.
- Oil the griddle generously, add the potatoes and season with salt, pepper and garlic powder.
- Add the onions and peppers, then leave everything alone 2 to 3 minutes before flipping.
- Sear the corned beef on another section until browned and crispy.
- Lower one side to medium-high and cook the eggs over medium.
- Mix the corned beef into the potatoes, move it all to the hot skillet and top with the eggs.
- Finish with green onions and a drizzle of sriracha.
29. Breakfast Hash
Golden hash browns, three kinds of peppers, onion and garlic cook together into one big crispy pile.
Diced smoked turkey makes it hearty enough to be the whole meal.
Ingredients:
- Cooking oil
- 2 cups diced onion
- 1/4 cup each diced green, red and yellow pepper
- 32 oz diced hash brown potatoes
- 12 oz diced smoked turkey or cooked beef sausage
- 1 to 2 tsp garlic paste (or 2 cloves minced)
- Blackstone SPG seasoning
- Fresh parsley, chopped
Instructions:
- Preheat the griddle to medium-high.
- Drizzle with oil and cook the onions and peppers until they start to soften.
- Add the potatoes and cook until golden and crisp, adding oil as needed.
- Push everything aside and cook the turkey and garlic on the open side until heated and fragrant.
- Mix it all together and season generously with SPG.
- Top with parsley and serve hot.
💡 Tip: Spread the potatoes thin and don’t stir too often, that’s how you get the crispy bits.
30. Loaded Breakfast Bowls
Crispy potatoes, beef sausage, turkey bacon and melted cheese get topped with avocado and a fried egg.
Everyone can build their own bowl, which makes a slow Christmas brunch really easy.
Ingredients:
- 1 bag (750 g) frozen diced breakfast potatoes
- 8 beef sausages (some spicy, some mild)
- 8 slices turkey bacon
- 1/2 red onion, finely diced
- 1 avocado, sliced
- 1 cup extra sharp cheddar, grated
- 1/2 cup pepper jack, grated
- 4 eggs
- Vinegar-based hot sauce
Instructions:
- Air fry the potatoes at 400°F for 10 to 12 minutes, shaking halfway (or cook them right on the griddle).
- Preheat the griddle to medium-high and cook the sausages and turkey bacon until browned.
- Slice the sausages and chop the bacon.
- Cook the red onion in the drippings until soft and lightly caramelized.
- Add the potatoes, sausage and bacon and toss for 2 to 3 minutes.
- Sprinkle both cheeses over and let them melt.
- Fry the eggs to your liking.
- Divide into bowls and top with avocado, an egg and hot sauce.
If I had to pick just one for Christmas morning, it would be the vanilla ice cream French toast. It takes almost no effort, and the amaretto strawberries make it feel like a holiday brunch. The make-ahead burritos are a close second, because future me always appreciates past me’s planning.
