Ingredients

  • 8 eggs
  • 1/2 cup milk
  • 1 cup chopped spinach
  • 1 cup chopped mushrooms

  • 1 refrigerated pie crust (optional)

Instructions

  1. Heat the oven to 350°F and grease a mini muffin tin.
  2. Press small circles of pie crust into the cups if using.
  3. Cook the mushrooms and spinach for 3 minutes and divide into the cups.
  4. Whisk the eggs, milk and cheese and pour into the cups.
