Instructions
1- Preheat oven to 350°F (175°C). Roll out pie crust and use a round cutter (about 3 inches) to cut circles. Press each circle into a greased muffin tin to form mini crusts.
2- In a mixing bowl, whisk together pumpkin puree, evaporated milk, granulated sugar, brown sugar, egg, pumpkin spice, and vanilla until smooth.
3- Spoon about 1–2 tablespoons of pumpkin mixture into each mini crust, filling almost to the top.
4- Place muffin tin in oven and bake for 18–22 minutes, or until filling is set and crust is golden.
5- Allow mini pies to cool in the pan for 10 minutes, then transfer to a wire rack. Top with whipped cream before serving.
2. Sausage Stuffed Squash Rings
These roasted delicata squash rings are filled with a flavorful mix of sausage, zucchini, broccoli, quinoa, pecans, and dried cranberries—bringing all the best flavors of fall to one bite. Perfect as a festive Thanksgiving appetizer or first course, they’re elegant yet easy to serve.

Ingredients
- 2 medium delicata squash, sliced into 1-inch rings, seeds removed
- 1/2 lb ground sausage

- 1/4 cup pecans, chopped
- 1/4 cup dried cranberries
- 1/4 cup onion, finely diced
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme (or fresh)
- Salt & pepper to taste
Instructions
1- Preheat oven to 375°F (190°C). Slice delicata squash into rings, scoop out seeds, and place on a baking sheet. Brush lightly with olive oil, salt, and pepper. Roast for 15 minutes.
2- In a skillet, heat olive oil. Add sausage and cook until browned. Stir in onion, garlic, zucchini, and broccoli, cooking until softened.
3- In a bowl, combine sausage mixture with cooked quinoa, pecans, and dried cranberries. Season with thyme, salt, and pepper.
4- Spoon filling into each roasted squash ring, pressing gently to pack.
5- Return stuffed rings to the oven for 10–12 minutes, until heated through and slightly crisp on top.
6- Garnish with fresh herbs if desired. Serve warm as an appetizer or festive side dish

3. Sweet Potato Bites
Slice sweet potatoes into rounds, roast them, and top with goat cheese and a sprinkle of pecans. They can be prepped and assembled a day ahead—just reheat them when it’s time to serve.

Ingredients
- 2 large sweet potatoes
- 1 cup cottage cheese
- 1/4 cup pecans, toasted & chopped
- 1 tbsp honey or maple syrup
- Pinch of cinnamon & salt
Instructions

- Split open and fluff the inside with a fork.

Ingredients
- 1 sheet puff pastry, thawed

Instructions

Brush pastry edges with beaten egg.

Roast for 15 minutes.
Meanwhile, cook chopped bacon in a skillet until crispy.
Remove bacon and mix with roasted Brussels sprouts.
Drizzle maple syrup over sprouts and bacon, toss gently.
Roast another 5–7 minutes until caramelized.

Ingredients
- 1 small butternut squash, peeled and cubed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream (optional)
- 1 tbsp olive oil
- Salt & pepper to taste
- Pumpkin seeds or fresh herbs for garnish
Instructions
- Heat olive oil in a pot over medium heat. Sauté onion and garlic until soft.
- Add cubed butternut squash and broth. Bring to a boil, then simmer until squash is tender (15–20 minutes).
- Blend soup until smooth using an immersion blender or in batches in a regular blender.
- Stir in cream (if using) and season with salt and pepper.
- Serve in small shot glasses, garnished with pumpkin seeds or fresh herbs.

12. Pig in Blanket Wreath With Crescent Rolls
This festive appetizer is perfect for holiday parties or game day gatherings. Mini sausages wrapped in buttery crescent rolls are shaped into a wreath and baked until golden, then served with your favorite dipping sauce in the center. It’s fun, easy, and always a crowd-pleaser!
Ingredients
- 2 cans crescent roll dough
- 48 mini cocktail sausages
- 1 egg (for egg wash)
- 2 tbsp sesame seeds or poppy seeds (optional, for topping)

Instructions
