Ingredients

  • 4 cups Frozen hash browns (preferably Russet)
  • 2 tbsp Olive oil
  • 1 cup shredded cheddar cheese
  • 1 red onion
  • 4 sausages
  • 4 strips bacon (sliced)
  • 4 eggs
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  • Preheat your Blackstone griddle and grease it with olive oil. Ensure the griddle and oil are hot before adding the potatoes. Set the heat to Low.
  • Spread the frozen hash browns on the griddle and use a spatula to create an even layer. This helps them thaw and brown.
  • In a large bowl, whisk together the eggs and a bit of water to make them fluffier.
  • While the potatoes are cooking, prepare the bacon, onions, and sausages.
  • Add the finely chopped red onion to the cooking potatoes. Mix well and move the mixture to one side of the griddle.
  • Increase the heat and place the bacon on the opposite side of the griddle to cook. Cook the bacon to your preferred level of crispiness.
  • Place the sliced sausages in the middle of the griddle and cook them on low heat.
  • Move the cooked bacon and sausages into the potato and onion mixture. Pour the whisked egg mixture onto the other side of the griddle. Add the butter to the egg mixture.
  • Use a spatula to scramble the eggs until they are evenly cooked. This should only take a few minutes.
  • Once the eggs are almost done, mix them into the potatoes and meat mixture.
  • Ensure everything is well-mixed, then add the shredded cheese. Turn off the griddle and cover the mixture with a melting lid to allow the cheese to melt.
  • Your Hash Browns on the Blackstone griddle are now ready to serve. Garnish with chopped green onions and season with salt and pepper to taste.
