Ingredients

  • 1 pound 1 pound large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregno
  • salt and pepper to tast
  • wooden skewer (soaked in water for 30 minutes)
  • 2 cups cooked rice
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Blackstone griddle to medium-high heat.
  • In a bowl, mix the olive oil, minced garlic, paprika, oregano, salt, and pepper.
  • Thread the shrimp onto the soaked wooden skewers.
  • Brush the shrimp skewers with the prepared olive oil mixture, coating them evenly.
  • Place the skewers on the preheated griddle and cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
  • While grilling the shrimp, warm up the cooked rice.
  • Serve the grilled shrimp skewers over the rice, garnished with freshly chopped parsley.

Notes

For enhanced flavor, marinate the shrimp for at least 30 minutes before skewering and grilling.
