Preheat your Blackstone griddle to medium heat (around 350–400°F). Lightly drizzle olive oil on the surface and spread it evenly to prevent sticking. If using a pizza stone, place it on the griddle while it preheats.
Roll out your pizza dough into your desired shape and thickness. Carefully place the dough onto the griddle or pizza stone. Cover with a dome lid and cook for 3–5 minutes until the bottom firms up and starts to turn lightly golden.
Use a spatula to check the underside of the crust. Once the bottom is cooked, flip the dough carefully so the cooked side is facing up. Reduce the heat slightly to avoid burning.
Spread pizza sauce evenly over the cooked side of the dough. Add your toppings starting with vegetables and meats, then finish with a generous layer of shredded cheese.
Cover the pizza with a dome lid to trap heat and help the cheese melt. Cook for 7–10 minutes, checking occasionally to make sure the bottom doesn’t burn. Adjust heat as needed.
Once the cheese is fully melted and the crust is crispy and golden, remove the pizza from the griddle using a spatula or pizza peel.
Let the pizza rest for 2–3 minutes before slicing. Cut into slices and serve hot.
