- 3 garlic cloves, minced
- 1 medium head of cabbage, cored and chopped into 1-inch pieces (about 2 lbs)
- ¾ tsp kosher salt, plus more to taste
- ½ tsp freshly ground black pepper
- 1 tsp red wine vinegar
Instructions
- Prepare the Sausage
- Halve the kielbasa lengthwise and slice into ½-inch pieces.
- Heat ½ tbsp olive oil in a large skillet or Dutch oven over medium heat.
- Add the kielbasa, toss to coat, and cook until browned (about 3 minutes per side). Remove the sausage and set aside.
- Cook the Vegetables
- Lower the heat to medium-low and add the remaining 1 tbsp olive oil to the pan.
- Add the chopped onion and cook, stirring occasionally, until softened (about 5 minutes).
- Add Cabbage and Seasonings

Instructions
- Prepare the Cabbage:
- Bring a large pot of salted water to a boil. Submerge the whole cabbage and cook for 4-6 minutes until leaves are pliable—drain and cool. Alternatively, freeze the cabbage head overnight and thaw for easier peeling.
- Cook the Filling:
- Heat olive oil in a skillet over medium heat. Sauté cauliflower rice, onion, and garlic until tender and lightly browned (about 5 minutes).
- In a large bowl, combine the cooked cauliflower rice mixture, ground beef, parsley, Italian seasoning, salt, nutmeg, whisked egg, and ½ cup marinara sauce. Mix well.
