1- Ninja Creami Vanilla Protein Ice Cream Recipe
Ingredients
- 100 grams (½ cup) cottage cheese (use 2% or full-fat for creaminess)
- 50 grams (1 ½ scoops) of vanilla whey protein isolate
- 2 tablespoons allulose or other low-calorie sweetener (e.g., monk fruit, stevia, erythritol)
- 1 teaspoon vanilla bean paste or vanilla extract
- 1 cup skim milk (or milk of choice, such as Fairlife skim milk or unsweetened almond milk)
Equipment
- Ninja Creami ice cream maker
- Immersion blender (or regular blender)
Instructions
1. Combine Ingredients
- Add the cottage cheese, vanilla whey protein powder, vanilla bean paste (or extract), and sweetener to the Ninja Creami pint container.
- Pour the milk into the container until it reaches the max fill line.
- Use an immersion blender directly in the pint container to blend all ingredients until smooth. If you don’t have an immersion blender, use a regular blender, then pour the mixture back into the pint container.
2. Freeze for 24 Hours
- Cover the pint container with its lid and place it on a flat surface in your freezer.
- Freeze for at least 24 hours to ensure the mixture is solid and ready for processing.
3. Process in the Ninja Creami
- Remove the pint from the freezer and take off the lid.
- Place the frozen pint into the Ninja Creami’s outer bowl and secure it with the lid assembly.
- Install the bowl into your machine following the manufacturer’s instructions.
- Select the “Lite Ice Cream” function to process.
4. Check Texture and Re-Spin if Needed
- After processing, check the texture of your ice cream. If it appears crumbly or powdery, reinstall it in the machine and press “Re-Spin.”
- If necessary, add 1–2 tablespoons of milk to smoothen it further before re-spinning.
5. Optional Mix-Ins
- If you want to add mix-ins (e.g., chocolate chips, crushed nuts, or cookie crumbles), create a well in the center of the ice cream after processing.
- Add up to ¼ cup of mix-ins and use the “Mix-In” function on your Ninja Creami.
6. Serve and Enjoy
- Scoop out your creamy, high-protein vanilla ice cream and enjoy immediately!
Tips for Success
- For extra creaminess, use full-fat cottage cheese or add a tablespoon of heavy cream to the mixture before freezing.
- If using almond or coconut milk instead of dairy milk, note that this may slightly alter the texture.
- Adjust sweetness based on personal preference by increasing or decreasing your chosen sweetener.
