3- Make the batter: In a large bowl, mash the bananas. Add the Greek yogurt, browned butter, and eggs. Whisk to combine, then add the sugar, vanilla extract, and pinch of instant coffee, and mix.

4- In a separate bowl, mix the flour, baking soda, and salt.

5- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared loaf pan.

6- Bake: Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center comes out clean. If the top of the loaf starts to brown too quickly, cover it with a piece of tin foil around minute 40.

7- Remove from the oven and let cool for 15 minutes before removing from the pan and slicing.

Ingredients:

  • 1 1/2 cups dairy-free yogurt (coconut, almond, or cashew yogurt)
  • 1/2 cup coconut cream
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Optional mix-ins: chopped fruits, chocolate chips, granola

Instructions:

1- Mix Base, Whisk together dairy-free yogurt, coconut cream, maple syrup, and vanilla extract until smooth. Use a thick, Greek-style dairy-free yogurt for best results

2- Prepare for Freezing, Line a baking sheet with parchment paper. Use a silicone ice cube tray or mini muffin pan for uniform shapes

Optional: Add a layer of granola or crushed nuts at the bottom of each mold

  • 90g dark chocolate chips 

Instructions:

1- Preheat your oven to 350°F (175°C). Line an 8×8 inch glass baking dish with nonstick spray and set aside.

2- In a large bowl, whisk together the flour, cacao powder, baking powder, and salt.

3- Mix in the monk fruit, Greek yogurt, and almond milk. Mix until just fully incorporated; do not over-mix. The batter should be fairly thick, but add another splash of almond milk if it seems too thick.

4- In a microwave-safe bowl, melt your chocolate chips (add a little bit of coconut oil if needed). Pour into your brownie batter and gently fold.

5- Transfer the batter to your prepared baking dish and top with additional chocolate chips if desired.

6- Bake for 30-35 minutes.

7- Allow to cool slightly before cutting into squares and serving.
