- 10 oz cream cheese, softened (1 8oz package + 2oz)
- 1/2 tsp peppermint extract
- Red food coloring, optional
- Mini Oreos and extra white chocolate, optional (for garnish)
- Candy canes, for decoration
Instructions
- Prepare Oreo Base:
- Pulse Oreos in a food processor until finely ground, then add melted butter and pulse until evenly coated.
- Divide about 2 1/2 Tbsp of the mixture into each of 6 serving cups. Press to level, then set aside.
- Melt White Chocolate:
- Melt the white chocolate according to the package directions. Let it cool to lukewarm without setting.
- Whip Cream:
- In a medium bowl, whip heavy cream to soft peaks. Add 3 Tbsp powdered sugar and whip to stiff peaks. Place in the refrigerator.
- Prepare Cheesecake Mixture:
- In a separate bowl, beat the cream cheese until smooth. Add remaining 5 Tbsp powdered sugar and peppermint extract, then blend.
- Fold in the cooled white chocolate. If desired, divide mixture in half, tint one half with red food coloring, and then fold half of the whipped cream into each mixture.
- Assemble Cheesecakes:
- Spoon or pipe the cheesecake mixture over the Oreo crust in each cup. Chill for 2 hours.
- Garnish:
- Before serving, garnish with crushed candy canes, mini candy cane sticks, or peppermint white chocolate-dipped Mini Oreos (optional).

- Place in the freezer while preparing the filling.

- In a medium bowl, combine cream cheese, 4 ounces of Cool Whip, molasses, ginger, cinnamon, nutmeg, and powdered sugar. Beat with an electric mixer until smooth.
- Assemble the Cheesecakes:
- Remove the glasses from the freezer and spoon about 3-4 tablespoons of the cheesecake mixture into each glass.
- Add Topping:
- Top each cheesecake with the remaining Cool Whip and decorate with sprinkles or a gingerbread candy, if desired.
- Chill and Serve:
- Let the cheesecakes set in the refrigerator for about 2 hours before serving.
