Step 1: PREPARE THE STEAKS

Dry brine the steaks the night before or a few hours before grilling on the Traeger grill. To dry-brine your steaks, add a good amount of salt and set them in the fridge for a couple of hours or overnight.

This will tenderize and flavor the meat, and remove excess moisture, making it taste even better. Remove the steaks from the fridge and place them in a shallow dish.

Step 2: SEASONING THE STEAKS

Put the steaks on a plate and use your hands to press the peppercorns all over. Now sprinkle some garlic powder on the steaks.

Allow the steak to rest for a minute on the pan and then return it to your refrigerator for a few minutes.

Step 3: PREPARE THE TRAEGER GRILL

Fill the Traeger hopper with as wood pellets as needed to create a full load. Hickory is a type of wood that creates a lot of smoke. This would be especially true during the short cooking time needed for this recipe.

Now preheat the Traeger to 225˚ with the lid closed for 15 minutes. and You can prepare side dishes alongside. When the Traeger reaches the desired temperature, take the steaks out of the fridge and let them rest at room temperature for about 30 minutes.

While the smoker is heating, I grab my steaks and rub them with a light drizzle of olive oil.

 Step 4: SMOKING AT 225 DEGREES

Top sirloin Traeger steaks normally have less fat so the smoke should be much quicker. In this recipe, I reverse sear the Traeger top sirloin steaks. Reverse sear means you give the steaks some high heat AFTER smoking/grilling them.

Because we reverse sear, you will want to pull your steaks off of the smoker 10 degrees below your final cook temp desire

Step 5: Reverse SEARING sirloin steak

I Like to reverse sear my sirloin steaks on Traeger grill because it maximizes the flavor. I first smoke/grill until they’re rare-ish and then finish off the steaks with high heat.

Use your probe thermometer to get an accurate reading of the internal temperature, then remove the steak from the heat when it’s 10 degrees below your desired final cook temp. 

For this recipe, I’m using my Traeger pellet grill to reverse sear sirloin steaks. You may also use a pellet smoker or stove to reverse sear.

Heat the Traeger pellet grill to 500 F. Use a cast iron skillet and preheat the cast-iron skillet with the grill to prevent cold spots. Put some butter in a cast-iron skillet and once you put the steak in the cast-iron skillet, it should sizzle loudly to confirm that it’s at the right temperature.

Use your tongs to flip the sirloin steaks every 1 to 2 minutes. I cooked the sirloin steak on Traeger for 2 minutes on each side.

 I sear one side for 1 minute, flip it, and insert a thermometer until you get that desired 10˚, then sear the other side. Remember, I took the meat off of the Traeger grill at 225.˚ and then seared the steak at 145˚ for a medium steak.

You should try to get a good brown crust on the steaks but you don’t want them burned.

Step 6- LET THE STEAKS COVER IN ALUMINUM FOIL AND REST

Once you get your meat up to the right temperature it’s time to rest it. Grab the aluminum sheet. Once you remove 1 or 2 steaks at a time, place them in foil cover the steak, then unwrap it to add the next few steaks until all of my steaks are seared.

They’re now in foils and resting. I fold the foil up and let it sit for about 10 minutes.

Step 7- Cut the steak along the line of muscle fibers and enjoy

Cutting your steak the wrong way can result in a tough and chewy steak. Cutting against the grain can make it easier to chew and more flavorful.

To cut against the grain, hold the steak Knife at a 45-degree angle, then slice straight down to create thin, even slices.

STORAGE & REHEATING
